2019 Adastra Pinot Noir

The 2019 Adastra Pinot Noir is garnet in color.  It has aromas of cranberries, cherries, plums, tomato paste, beets, all spice, vanilla and cola.  The wine is medium-bodied with a plush mouthfeel, nice concentration and good balance.  Flavors include fruit compote, blueberries, blackberries and vanilla, along with an earthiness.  This wine will continue to evolve for at least the next decade. Pinot Noir grapes for Adastra wines are estate-grown on our 20-acre Carneros AVA vineyard and certified organic by the California Certified Organic Farmers (CCOF). 140 cases crafted.

Barrel Aging 15 months in 100% new French oak.

Fermentation DRC, 777 and some 115 were fermented separately in S-bins, each with 50% whole clusters. Swan, Pommard and the remaining 115 were co-fermented in a tank. Everything was pressed on 11.07.19, so that’s 49 days maceration and 45 days maceration.
